bolognese sauce - recipe by jamie oliver

bolognese Sauce 是最經典的義大利肉醬
做法有很多種
可以自己變化
但我最喜歡jamie oliver這一款
通常這肉醬也可以拿來做千層麵

2 slices of smoked bacon (finely sliced)
2 medium onions (diced)
2 cloves of garlic (chopped)
2 carrots (diced)
2 celery stalks (diced)
olive oil
2 heaped teaspoons dried oregano
1 pounds pound beef, pork or a mixture
2 x 14 once cans diced tomatoes
4 ounces Parmesan cheese
sea salt and ground black pepper
a small bunch of fresh basil

add two table spoon of olive oil, bacon and oregano cook and stir until the bacon is lightly golden
add vegetables and stir every 30 seconds for around 7 minutes or until softened and lightly colored
stir in the ground meat and canned tomatoes
fill both empty cans with water and add to the pan
stir in a good pinch of salt and pepper
pick the basil leaves and place in the refrigerator for later
finely chop the basil stalk and stir into the pan
bring to boil
turn the heat down and simmer with a lid on for about an hour, stirring every now and again to stop it catching
Remove the bolognese sauce from the heat
add Parmesan and stir half to the sauce. (save the other half for garnish)
tear and stir in the basil leaves.
add some salt and pepper


dada! you have a beautiful bolognese Sauce
這個時食譜做出來的不錯吃
但通常加了絞肉之後我會加紅酒煮個兩三分鐘再加番茄
這食譜也沒有加tomato paste但我會加一小罐 尤其是要把肉醬拿來做千層麵話
還有simmer時我會加月桂葉 (這樣才感覺我有比jamie厲害一點)
