i was wondering if i am able to made some for her instead buying from the store.
i love Voortmen when i found out it is a Canadian company but still, nothing is better than homemade.
well, i was wrong, tats said, i have to make one taste exactly like the store bought blueberry soft cookies.
i tired, it is close enough.
here is the recipe that i have to keep.
this recipe make around 20 cookies
3/4 cup of soften butter
1 cup light brown sugar
2 egg yolks
1 table spoon of vanilla extra (or almond extra)
1 cup all purpose flour
1/2 cup whole wheat flour
(or 1 and 3/4 cup of all purpose flour, if don't want to use whole wheat)
1 teaspoon baking power
1 tea salt
3/4 cup dried coconut powder
1/2 cup of blueberry jam
Preheat oven 375 F
line baking sheets with parchment paper
(A) Mix flour, Baking powder and salt together and set aside.
(B) Mix butter and super until smooth. add egg yolk one at a time mix until smooth, add vanilla extra.
Add dried ingredient (A) into the butter mixture (B) mix well, add dried coconut powder. mix well.
use spoon to scoop them onto baking sheer (around one inch ball). the dough will be flatten and expends lots so leave at least i inch space between each dough.
Use you thumb to press the middle of the rough to make a well, if the dough is too sticky, dip your thumb in the water first. add blue jam to the well of each cookie dough.
Bake for 12-15 minutes.
they don't taste exactly like Voortman's cookies, i am sorry tats but they are yummy and they are homemade. I love them.
